So this weekend I decided to make some cupcakes.. I picked this recipe because two of my favourite foods are white chocolate and strawberries, and I figured together in a cupcake they would be fantastic. And they kind of were.
White Chocolate Cupcakes
Makes 18
Ingredients:
1 1/2 cups all-purpose flour1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup unsalted butter
3/4 cup sugar
2 eggs, at room temperature
4 ounces white chocolate chips, melted and cooled to room temperature
1 1/2 teaspoons vanilla extract
1 cup milk, at room temperature
Preheat the oven to 325 degrees. Line a muffin pan with cupcake liners and set aside.
In a medium bowl, beat the butter until light in color. Add the sugar and beat until light and fluffy. Add the eggs, one at a time, and mix until just combined. Stir in the melted chocolate and vanilla until combined. Sprinkle 1/3 of the flour mixture into the bowl and mix until just combined. Add half of the milk in alternating addition (half of the remaining flour, the remaining milk, the remaining flour) Do not over mix.
Vanilla Frosting and Strawberry Garnish
Ingredients:
3 cups powdered sugar
2 tablespoons butter, at room temperature
2 tablespoons milk
1/2 teaspoon vanilla
1 lb. fresh strawberries
1 ounce white chocolate, melted
Slice or cut 2/3 of the strawberries into quarters and set aside.
Put the remaining 1/3 of the strawberries into a medium bowl and crush with a masher. Stir in the sugar. Cover and set aside for at least a half an hour.
